I don’t think it’s intuitive to use Ctrl or Shift to check when entering multi-select in the form component. Can I change it so that it can be selected or canceled by clicking on the check box format or mouse?

Yes, you can change from select to checkbox to select with no issues. Go to the Data Builder > Table that has the multi-select field > multi-select field. Click on the upper right text and have the drop down menu show. The select the checkbox option.
