Is there a way to view my data the way it would look in the app in the Page Builder outside of the Page Preview? The Page Preview mode doesn’t seem to do that, and instead populates all data or sample data. For example, I created a Page that filtered by a category, but Page Preview did not filter the data.

This function is not available when working in the page builder. You have to save the page then view from the front-end. It sounds like the filter functionality you are attempting to implement is not correct. Happy to help if you can provide some additional details or images of how your filters are set up.
